MÁS DE 3.000 SUSTANCIAS QUÍMICAS EN CONTACTO CON ALIMENTOS LLEGAN AL CUERPO os envases y otros artícuL: en contacto con ali'entos contienen una gran variedad de sustancias químicas. Un estudio indica que 3.601 de estas se han encontrado en muestras humanas como la sangre, la orina y la leche materna. El estudio que asíllo señala es una revisión de investigaciones previasque publicaJournal of Exposure Science : Environmental Epidemiology y en el quelosautoresindican que hay importantes lagunas en los datos de biovigilancia y toxicidad. Elequipo comparó más de 14.000 productos químicos en contacto con alimentos (FCC) conocidos con datos de cinco programas de biomonitorización humana, tres bases de datos de metabolomas/exposomas y la literatura científica.
Las pruebas indicaron la presencia de 3.601 FCC en humanos, lo que representa el 25% delos conocidos, indica el estudio que encabeza el Foro de Envases Alimentarios, una organización suiza de científicos que estudia los productos químicos en los materiales en contacto con los alimentos. Ciertos grupos de sustancias químicas, como los bisfenoles, sustancias perfluoroalquiladas y polifluoroalquiladas (PEAS), los ftalatos, los metales y loscompuestos orgánicos volátiles, se han detectado ampliamente en muestras humanas y en materiales en contacto con alimentos. “Muchas de estas sustancias químicas tienen propiedades peligrosas preocupantes y se han relacionado con daños a la salud humana”, indicó el Foro de Envases Alimentarios.
Según JaneMuncke, una delas autoras del informe, este pone de relieve “el hecho deque losmateriales en contacto con alimentos no son totalmente seguros, aunque cumplan la normativa, porque transfieren sustancias químicas peligrosas conocidas a las personas”. Lainvestigadora dijo que les gustaría que esta nueva base de pruebas se usara para “mejorar la seguridad de los materiales en contacto con alimentos”. Sin embargo, en el caso de otras sustancias químicas que pasan del envase al alimento, comolos antioxidantes y oligómeros sintéticos, se sabe poco sobresu presencia y destinoen elser humano.
Los antioxidantes, a pesar desus elevados volúmenes de producción y su uso generalizado en plásticos, están en gran medida ausentes de los programas de seguimiento, destacó otra delas firmantes deltexto, KseniaGroh, del Instituto Federal Suizo de Ciencia y Tecnologías Acuáticas Los conocimientos sobre el metabolismo, el destino y los efectos de estas sustancias “son, en general, escasos”, dijola investigadora.
El estudio señala que no se han investigadosuficientemente los peligros potenciales de muchas sustanciasquímicas y aunque elenvasado de alimentos no esa única fuente de exposición, losdatos de este estudio mejorarán la comprensión de cómo los materiales en contacto con los alimentos contribuyen a la exposición humana.
